Press the tea cake with your left hand and hold the knife with your right hand, keeping both hands parallel. Insert the tip of the tea knife along the gaps of the tea cake to pry it open, adjusting the angle and direction flexibly if you encounter resistance. (Note: After breaking the tea, store the tea cake in a sealed bag to prevent moisture and absorption of foreign odors.)Step 4: Measure the tea. First, it shows carefulness as a person; second, it reflects the value of the tea. For 3-5 people, it is recommended to use 6 grams of tea for a 100ml gaiwan. For 6-8 people, use 8 grams of tea for a 120ml gaiwan. The suggested tea-to-water ratio is 1:15–20, which can be adjusted according to individual taste preferences.Step 5: Warm the cup and clean the utensils with boiling water. For the first three infusions, serve immediately after adding water. For subsequent infusions, you can extend the brewing time based on the tea’s flavor and strength.
