Fuding White Tea is a specialty of Fuding City, Ningde City, Fujian Province. It is a national geographic indication product of China. – Production Process
Fuding White Tea is a micro fermented tea. The production process is no frying and no kneading. The main process is withering and drying.
Withering can be indoor natural withering, heating withering and so on. After drying, the tea is mostly cooked with gentle fire.
In June 2004, the former General Administration of Quality Supervision, Inspection and Quarantine of the People’s Republic of China (AQSIQ) officially approved “Fuding White Tea” as a product of protected origin.

Efficacy
White tea has the lowest content of free radicals, the highest content of flavonoids, and the average content of amino acids is higher than other teas. In addition, Fuding White Tea has the effect of clearing heat and dispelling fire. Extracts of white tea have preventive effects on bacterial growth such as staphylococcal infections, streptococcal infections, and pneumonia.

The brewing method of Fuding white tea needs to be selected according to the type of tea leaves (such as new tea and old tea), including controlling the water temperature (85-90 ℃ for new tea and 95-100 ℃ for old tea), precise tea dosage (tea to water ratio of 1:20 to 1:50), flexible adjustment of brewing time, and matching with suitable tea utensils to fully release the tea aroma.
Main brewing methods
Cover bowl brewing method.
Applicable: White Hair Silver Needle, White Peony, New Tea (within 3 years).

Steps:
After warming up the cup, add 5 grams of tea (110ml covered bowl).
New tea is poured with 85-90 ℃ water along the cup wall, while old tea is poured with boiling water.
Quick soup making: Soak for 5-10 seconds in the first 1-3 steps, and extend for 5-10 seconds for each subsequent step.
Advantages: Clear hierarchy, suitable for sharing.
Boiling tea method.
Applicable: Lao Shoumei, aged white tea (over 3 years old).

Steps:
Take 5-8 grams of dry tea and pour it into a pot with cold or hot water.
Bring to a boil over high heat and reduce to low heat for 3-5 minutes. Leave 1/3 of the tea soup at the bottom and continue boiling.
Advantages: Rich and mellow, with a medicinal and jujube fragrance.
Glass brewing method.
Applicable: White Hair Silver Needle, White Peony, New Tea.
Step: Add 3-5 grams of tea, pour in 90 ℃ water, let it stand for 1 minute, and then drink.
Advantages: Portable and simple, allowing for viewing of tea leaves as they stretch.
Cold soaking method.
Applicable: Bai Hao Yin Zhen, Chun Shou Mei (New Tea).
Step: Mix 1 gram of tea with 100ml of cold water, refrigerate for 4-8 hours or melt with ice.
Advantages: Cool and sweet, suitable for summer.
Key skills and precautions
Water temperature control: New tea should be kept at 85-90 ° C to avoid bitterness, while old tea should be kept at 95-100 ° C to stimulate internal quality.
Tea ratio: Cover bowl 1:20 (e.g. 5g/110ml), glass cup 1:50 (e.g. 3g/200ml).
Time management: The first infusion quickly releases the soup (<10 seconds), and subsequent infusions are extended by 5-10 seconds.
Tea set selection: For new tea, use a white porcelain covered bowl to preserve its aroma, while for old tea, you can boil it or use a purple clay pot to enhance its richness.
Water quality and storage: Use purified water or mountain spring water, avoid tap water; Tea storage should be kept away from light and moisture.
