Warm and clean the utensils: Rinse the Gaiwan, fairness cup, and tasting cups with boiling water to raise the temperature of the vessels, which helps to release the tea aroma.2. Add tea: Place an appropriate amount of tea leaves into the Gaiwan according to its capacity (usually 110-150ml), with a ratio of about 1:20 (e.g., 7g of tea with 140ml of water).3. Rinse the tea (wake the tea):· Gently pour slightly cooled hot water (about 90-95°C) along the edge of the Gaiwan just enough to cover the leaves.· Immediately cover the Gaiwan and discard the tea liquor. The action should be quick to awaken the leaves without over-extracting their essence.4. Brewing:· Water temperature: Use hot water at 90-95°C. Avoid pouring boiling water directly to prevent scalding the tender leaves and producing an unpleasant cooked taste, which affects the tea’s delicate sweetness.· Pouring: Use the “fixed-point low pour” method or pour gently along the inner wall of the Gaiwan, avoiding direct pouring onto the leaves to reduce rapid extraction of bitter substances.· Pouring out tea: After pouring water, immediately pour out the tea within 5-10 seconds. For the first few infusions, it is not necessary to let the tea sit; the purpose is to release the tea quickly and evenly.5. Tasting: Pour the tea into the fairness cup first, then into tasting cups. Ice Island tea has a mellow and smooth texture with a pronounced rock sugar aroma, and the sweet aftertaste comes quickly and lasts long.6. Subsequent infusions: From the 5th-6th infusion onwards, you can slightly extend the brewing time by 5-10 seconds depending on the tea concentration.
